Dried Fiddlehead ferns with tomato paste (Vegan)


200 gm. cooked dried ferns.
1 clove of garlic (sliced).
1 onion (sliced).
6 - 7 Tbsp tomato paste (200 gr. approx.).
2 tbsp sunflower oil.
Salt to taste.
A dash of chilli powder (use more depending on tolerance).

The dried fiddle head ferns should be soaked up overnight in cold water.
The next day,it will look fresh and ready.
Rinse it thoroughly to remove all the dirt/grit and cook (covered) for half an hour with water until the ferns are tender.

1. Heat oil in a pan/wok, throw in garlic and onions, and sauté till the onions begin to brown.

2. Reduce flame to low and stir in tomato paste (watch out for splatter).

3. Add ferns, salt and chilli powder. Stir and toss gently until thoroughly combined/coated.

4. Lower flame to minimum, simmer for a minute, toss again and serve with rice.
