Noodle Salad with dried Fiddlehead Ferns
300 gr. noodles cooked as per the instructions on the package, drained and set aside.
200 gr. of the re-hydrated and cooked dried ferns, sauteed in 2 tbsp olive oil with 1 clove of minced garlic and 1 tsp soya sauce.
2 medium tomatoes sliced.
In a bowl, whisk together the following;
1 tsp of mustard, salt & pepper, 2 tbsp freshly pressed lemon juice/vinegar, 2 tbsp soya sauce (light), 1/2 tsp minced garlic (or 1 tsp if desired), 5-6 tbsp olive oil.
and throw in noodles, ferns and the sliced tomatoes. gently toss and mix the ingredients together to combine. Adjust the seasoning and enjoy warm or cold.
(Tried it with chilli powder and pepper, also a very good combo)
